The importance of sustainability in the catering industry is constantly growing and restaurateurs are being called upon to align their offerings ecologically, socially and economically in order to meet the increasing demands of customers. A holistic certification for the industry has been lacking until now, which is now being changed with the development of the new "ibex fairstay Gastronomie" label.
The initiators GastroGraubünden and ibex fairstay aim to extend the successful and already established sustainability label of the accommodation sector to the catering industry. In collaboration with several committed partners, a methodology is being created that supports restaurateurs and restaurateurs in further developing their business in the area of sustainability. The creation of the new customized management tool is supported by Innotour, the funding instrument of the State Secretariat for Economic Affairs SECO.
Successful initial certifications
Miss Miu Zurich Europaallee
Miss Miu, run by the Wiesner Gastronomie family, on Europaallee in Zurich offers a unique experience of Korean cuisine with a modern twist. The restaurant impresses with its stylish interior and a varied culinary offering, ranging from traditional Korean dishes to creative Korean BBQ. Guests can prepare their own meat and side dishes such as kimchi, rice and sprouts on the table grill. Vegetarian options and special offers such as "BBQ Mondays" round off the menu.
Nooch Bern Viktoriaplatz
Nooch am Viktoriaplatz in Bern, another Wiesner Gastronomie family business, offers a culinary journey through pan-Asian cuisine in a modern setting. The restaurant places great emphasis on fresh ingredients and creative recipes inspired by street food traditions. Guests can look forward to a varied menu ranging from wok dishes to sushi and special katsu creations. The restaurant is stylishly furnished and combines Asian design elements with urban flair. It is also a popular meeting place for sushi courses and other events. Sustainability plays an important role: attention is paid to local ingredients and environmentally friendly packaging.
